Since our inn is an old, historic half-timbered building, I believe a traditional culinary style is an essential part of the experience. That means traditional Westphalian dishes, such as Pfefferpotthast or beef with horseradish sauce, and of course the classic schnitzel with... Seasonal cuisine is also part of the experience, because kale and goose are only available in winter; in spring, of course, there are asparagus dishes; and in summer, broad beans (sometimes prepared classically, sometimes with chili and tomato). As a trained chef, however, I also need some variety to keep my work enjoyable. I often get ideas for this while on vacation, so we have Swiss cuisine weeks, Spanish tapas nights, North German cuisine featuring Hamburger Pannfisch, or—during the World Cup—we take a culinary tour of the world with coq au vin, Arabic couscous, Austrian Kaiserschmarrn, or fish from Norway. We offer a small selection of vegetarian dishes, and the kitchen also has a few ideas in store for vegans.
